    My sister is using the Turkey to make Turkey-Corn Chowder, after pulling off most of the meat for sandwiches.

    I just had a Turkey sandwich using a good Swiss Cheese, and a good grainy Dijon-style mustard, lettuce and all on a great Sour-Dough 4 Cheese Bread I get from Trader Joe’s. :woot:

    If you have a TJ’s near you, do try this bread. Seriously. Also great toasted! :yes:

    You can get cheese bread lots of places, but for some reason TJ’s is really good!

    Also, get their (TJ’s) Sun-Dried Tomato Pesto. Spread a little on a slice of the cheese bread, sprinkle some grated Reggiano or other fav. cheese on and pop under the broiler for a couple of minutes. Easy, lasy-man pizza with GREAT flavors!!

    Damn – now I’m hungry again!!

    I love Trader joe’s! They are opening a new one right by my house in January and supposedly it’s going to be enormous!

    I used to make the _best_ turkey soup — way back when I cooked a turkey for T-giving. I’d take most of the meat off the bones – then pop the carcass (sounds awful, doesn’t it) into a big soup pot with water. I’d cook it all day – put it in the fridge at night — skim off the fat – then cook most of the next day. Remove bones — add lots of the leftover turkey, frozen peas, frozen corn, carrots, onions, tons of freshly grated black pepper. Yum.

    Sounds similar to what my sister is doing. We got it from Mom – one of the few good things she used to make.

    T’giving leftovers, for me, are better than the actual meal.
    After all the cooking and cleaning and entertaining, I’m usually not one to eat much at dinner.
    But a good turkey sandwich the next day is divine!

    turkey breast, either sourdough or rye bread, a little mayo and mustard, iceburg lettuce, and my favorite sandwich ingredient: Potato Chips for the crunch/salt factor

    the creamed corn and green bean casserole is def better the next day.

    I have ham which I will use to make scalloped potatoes & ham. I have turkey and some gravy for use in a casserole. I may use some of the ham tonight with a potato and some fresh pole beans to make a boiled dinner. It is amazing what I can do with a little meat.

    I sent a good size portion home with my mom; I’m left with a solid amount of turkey, stuffing, sweet potatoes, scalloped potatoes, cranberries, and spice cake with penuche frosting.
    This is what we’ll be eating for the next 2 days. My daughter had stuffing & gravy for breakfast. :shock: My husband scrambled eggs & mixed it with the scalloped potatoes. Everyone does their own thing. The dogs have their own container of turkey scraps, too. They are thankful.

    I almost never indulge at the actual meal — by the time I finish the cooking and cleaning and entertaining, I’m kind of over the whole thing. I do love the three-day weekend of leftovers, though.
